HARVEST AND VINE SELECTION

The harvest followed a cold and rainy winter, cool spring and very hot summer. The rainfall in September and October favoured the complete physiological and phenolic development of the grape. A rigorous hand-selection of vines is carried out in small boxes, followed by a second selection at the winery.

ELABORATION AND FERMENTATION

Following pre-fermentation maceration, fermentation is carried out in French oak vats at a temperature of 26ºC. Post-fermentation maceration lasts 7 days and ageing is carried out in French and American oak barrels for 14 months. Ageing is concluded in our underground bottle cellar for a further 10 months.

TASTING NOTES

100% Tempranillo, this is a fruity and soulful wine. Ruby red in colour, it is of high intensity, clean, bright and produces tears. It has notes of ripe, black grape and is aged in noble barrels, resulting in hints of black pepper, cloves and chocolate. In mouth, it is long, heavy and shows terroir, with a complex fruity aftertaste. This is a wine in evolution and has potential for longevity.

PAIRING

Pairs perfectly with beef, smoked foods, soft cheeses and international cuisine, namely Mexican and Chinese. Serve between 18ºC and 20ºC.
